I’m wary of these, but mostly because I’m used to being able to actually see the ribs I’m buying, and at $30 for 10 pounds there’s really no volume discount. A Google search turns up a discussion from 2008 on Smoking Meat Forums, and an article at Simplymeatsmoking.com that just describes baby backs.
Is there anything special going on here?
EDIT: Laughing out loud, on page 2 of the search results I found this, from our very own Meathead, in the glossary of pork cuts:
Danish ribs. Small slabs of baby backs usually from Denmark, but not always. One guy I know says “I think they’re possum ribs. They look like baby backs, only smaller, thinner, and meatless!” Never heard a good word about them.
Well that answers that!
