    First encountered by me in St. Louis, one of those best bites you never forget.

    this is the technique. I think most people just use a prepped sauce rather than this one.

    St. Louis BBQ Pork Steaks, a regional specialty. Pork steaks doused in sauce and cooked low and slow on the grill, all in one pan.

      This is exactly how I make country style ribs. Grill, then braise. It’s about quarter to seven in the morning, and I want pork steaks for breakfast now!

    Love this cut, Publix has them on sale every 3 weeks or so. My intro to them was a quick recipe. I salted 24 hours ahead. Bachans japanese bbq sauce and spiceology Maui wowee rub. Rev sear. 225 then a hard sear. Done it on pellet smoker and gas grill and in toaster oven and cast iron when it's raining
