Foil vs butcher paper for wrapping ribs

    I did a couple of racks of spares last Friday. No wrap, no spritz, three hours total, in the PBC. They were actually a little more done than I wanted. As we were nawing on some leftovers today my wife, who admitted she was not a big rib fan, really liked these ribs.

    I wrap in butcher paper when they come off the smoker and stick 'em in a cooler until the rest of dinner is ready.

      Not in favor of either wrapping. Butcher paper for resting but not for cooking. I try to maintain 250° when cooking ribs but if the temp goes haywire I'll spritz to keep the meat from getting to dark or crusty.

      Has anyone tried foil boating ribs?

        If I wrap ribs, I use foil because I'm putting butter & brown sugar in the foil to make the ribs taste like candy and want to be able to pour the sweet juices over the ribs. Paper wrap robs you of the juices.
