    Raw pork spares refreeze safety question

    Hello fellow Q heads,

    I ordered 2 sets of Dinos an 2 sets of spares for Porter road. They shipped the "flat rate". They took a week to arrive. I was going to smoke one rack of Dinos, and hold the rest in the freezer. I am planning on smoking the 2 sets of pork spares next Saturday.

    Here's my question. I placed the raw pork spares in my deep freezer. Is there any concern about refreezing raw pork ribs?

    No, assuming they were refrozen right after the whole thing was thawed. Texture suffering is usually the concern when doing things like steaks, but there's no safety issue. What you don't want to do is thaw, keep them in the fridge for a week or more and then refreeze.

        When you cook them bones to 205*F all bugs will be dead. IMO
        I use the smell test. Meat should not smell. When I doubt toss them out.

        You should be fine. If they were in an cyrovac bag there will be a little smell at first but it goes away after a few minutes . My wife has often told me that the ribs I set out to defrost will not be on the menu and I have had ribs that were thawed, refrozen, and thawed again. Still delicious.
