Does anyone else use Pork Neck Bones and Meat?

Does anyone use pork neck bones for anything? If so how? So far I only use them in Italian Sauce. I know Neck Bones are also used in the South. I'd be curious on some southern recipes.

To me the meat is sweeter and more flavorful than Rib meat.

I have an idea to smoke then braise the neck bones in some kind of stock and add Escarole and Rancho Gordo White Beans. Something like that.

Any thoughts, Ideas?? All are welcome.

My mom used to cook pork neck roasts by searing them first then slow cooking in an electric skillet. I always loved the brown, crunchy bits from that initial sear. I can’t, in all honesty, remember the differences in tastes between the neck roast and the loin roasts. That may call for an experiment. 😎

Right, that was my takeaway… find a pork neck!

They are popular, easily available and very cheap here in the Chicago area. Anywhere there are Italians there are neck bones for sale. I also have been seeing them in Hispanic, Asian and African American Markets. I am a Carpenter for a higher end Grocery chain in the Chicago area and they sell them at my stores too. Not the whole neck but cut up into pieces. They are delicious.

TENNESSEE NIKKI appears to love Pork Neck Bone Stew. I have never tried her recipe for pork neck bones but i do love me some soul food on occasion.

Smoked neck bones are great in a pot of greens.

I grew up on neck bones and I still make them every once in awhile. I usually either pressure cook or braise them. My ex used to bake them I believe. I don't use them for seasoning meat like I do with ham hocks. They are the main meat on the plate when I make them. It has been awhile; I need to pick some up.

Collard greens, field peas, stews, rice, and just about anything that calls for smoked ham hocks, can be done with smoked neck bones. I use venison neck to make shredded venison tacos, could probably do the same with a pork neck.

I use them in my dutch oven cooks down at the sauna. Cook them down with stock, onions and pulled pork. Great stuff. Excellent boost of collagen too.
