    On the road next week crashin’ RC planes 😁.
    I want to cook some St Louis wibs on my SNS travel kettle. Fire will be charcoal maybe with some hickory chunks on top. Also have one of those pellet tubes and some hickory pellets. Wondering how to light charcoal for slow cook at 225° for 4-5 hours. Should I light 6-10 coals in chimney then put on one end of unlit charcoal in the SNS side basket? Or just put a fill chimney of charcoal in the basket and close all the vents to get the temp down???

    Never tried the pellet smoke tube. Go or NoGo?
    Always enjoy trying something new!

    I’d do the 6-10 hot coals in the chimney method with 2-3 hickory chunks. It’ll be easier to maintain temps than using all hot coals. Plus you won’t have to worry about your coals possibly burning up before the ribs are done. [Is that what your 2nd option was supposed to read…a full chimney of hot coals?]

      No I have never used one. I’ve always used wood chunks. Hickory is my favorite also, followed by mesquite. Mesquite is great with chicken or pork chops.

      Smoke tube is ok. I used it a couple of times, I don't think that it put out as much smoke as you would think. I don't remember which pellets I used.

      If you reverse a grill grate, you can carefully load them with pellets and get a gentle, not prolonged smoke. Or you can make a mini tray from foil. Couldn't pass on #40 pellets for $12.95 at Costco recently.

    Regarding the smoke tube, I used to use one to add a little smoke on my gasser (along with one of those metal boxes you put wood chips in on the other end of the grill). I never use it on my Weber Kettle, as I get plenty of smoke using the snake method for charcoal with some wood chunks set on top of the charcoal snake. I suspect you will get plenty of smoke from a few hickory chunks on top of the charcoal, and the pellets wouldn't add much.

      smokenoob Murdy is right, as far as I know, smoke tubes are made to give additional smoke to cooks made on a gas grill, pellet grill or electric smoker…..cooking devices which traditionally can’t give out smoke on their own, or not enough smoke flavor. They’re not usually used on cookers burning charcoal or wood.

    I'd stick with 5 or 6 coals lit. Or do a dry run trial to see what you need to manage your temps so you don't have to fret much that day and when food is at stake.

        I’m probably late, however, I’ve been using 2 charcoal starters under one end a load of charcoal and letting the coals get started then closing th lid on my PK and dialing in the temp with wood chunks.
