    Bacon supply for the week

    I’m hoping 15 lbs of thick sliced bacon will see me through the weekend. At $4 a pound I couldn’t resist.

    Wow! $4 a pound for pork belly so you could smoke your own? I wish I saw prices like that here. When I'm able to fire up my smokers, bacon is on the (getting longer) list. Thanks for the inspiration.

      What a deal. I paid $4.49/ pound today at Costco for Kirkland thick sliced. And I was pretty happy with that. Good for you Pitmaster!!

        The hardest thing about smoking pork belly is somehow not devouring that stuff off the smoker.

          We're on the same wavelength, it's bacon time! Yours looks great! Just picked one up at Costco for $3.99 per lb. I'm going to try the new EcoCure (#1) from The Sausage Maker. That's the new nitrate free cure they recently came out with. I'm curious to see how it compares to using the pink salt cure. I'll follow up in about 10 days, after it is cured and cold smoked.

            Wright’s is $4/lb at Sam’s club. I use 2lbs a week. That’s not bad.

            My Sam's cannot get pork bellies any more. I even asked the butcher (the behind the door guy anyway) if he could special order me one, he told me they cannot get them. Sad face.

            I buy Costco pork belly for bacon, however, IMHO it's a bit too lean unless I carefully select the fattiest pieces.

              I've done bacon from pork belly myself, in the past, but I am currently loving the Costco thick sliced applewood smoked bacon, comes in 2 lbs pack, that I haven't felt the need to do it lately.

              Well, Here's my follow up on the EcoCure. The bacon came out incredible! The color and taste was as good, if not better than using pink salt #1. Cold smoked for 6 hours with hickory, apple and Cherry wood. Right out of the smoker we couldn't help but have BLT's. My wife said it was even better than my past ones, and the only difference was the EcoCure. I have no issues with nitrates/nitrites when used as recommended, but seeing and tasting the results of this slab, I'm sold on EcoCure. It was worth the extra cost. I recommend it. Next cook with it will be smoked sausage.

                Pork bellies were $4 here at HEB. Belly number 6 is in the fridge and will be sliced, vacuum sealed, and frozen in the next day or so. I should have close to 30 lbs in spite of tasting losses
