    Pulled pork with beef tallow?

    I’m doing some pulled pork in a few weeks. I have used some rendered pork lard (I have bought it in an tub) after the bark has set and I wrap it up with some in it. I have a tub of beef tallow, and I don’t want to buy pork lard since I ran out.

    Do you think beef tallow is just fine with the pulled pork? I also have some bacon grease. Think that is better or worse? I’m thinking bacon grease is too strong.

    Hey, how strong is the tallow? Do you think it could over-power it? I’m not stating a fact, just thinking out loud. I make lip balm from tallow and “clean” the fat so it’s not too “beefy”.

      Cmon now y’all! 🤣🤣🤣🤣🤣 The lip balm is totally neutral. And that’s because I “wash” it so many times. (Next secret Santa gift is forming in my little brain!)

    why to either? A pulled butt or shoulder has plenty of fat. For long holding or reheating I've found a few splashes of apple juice is sufficient.

    Yes, you can use it, but I would not for no particular reason. I have never tried that and it just doesn't sound good.
    Give it a try and report back. Please.
    Wrapping in foil works well as it saves the juices and is poured back on the pulled pork.

      I would go for it. There are so many other flavors going on in there, I think you will be just fine.

      Bacon grease will add more salt, something you may want to avoid.

      Tallow solves a lot of problems.

        Is there any way you could do a small test before S day? If you have any frozen, you could try some with the beef tallow added.

          Yep.

          I’ve added tallow to pulled beef and bacon grease to pulled pork. Works just fine.
