Offered to bring pulled pork to a SB party tomorrow. Will just be pulling from the freezer a few pounds that I smoked last month.
if I have a good amount left that doesnt get eaten, will quality be compromised if I vac seal and freeze it again?
Trying to guesstimate how much to bring. 12-15 people. The pork will be just one of several dishes, as well as having a glut of other snacks..
I'm think 4# should be plenty, and maybe there's leftovers 🤷♂️
Not sure I'd want to refreeze. I'd sooner use any leftovers next day on some nachos or some such... It's *probably* OK, but that's the kind of risk I just don't like to take. YMMV...

Vac seal/freezing seems to work just fine for pulled pork. If there's enough liquid in it to cause the vac sealer a problem, just pack the pork into the unsealed freezer bag(s) and let it freeze solid before vac sealing. I always use something like a binder clip to loosely seal the bag(s) until frozen.
I thaw in the fridge or in a cold water bath before reheating.
To reheat, I just leave it sealed in the bag then reheat it either (1) in a SV bath at 160F or (2) by putting it a good size pot of boiling water then turning off the heat and letting it sit in the hot water for about 20 minutes before serving.
I suppose you could go directly from frozen-in-the-bag to either the SV bath or to the pot of boiling water ... but I've not done it (yet).
