    Day before St Louis Ribs

    The plan was to Traegerize a rack of ribs tomorrow starting at 11:00
    You know what is said about the "best-laid plans".
    Change of plans, par grill tonight and finish tomorrow at 16:00.

    I think they’ll be excellent, and the division of labor between the days will be easier on the Pitmaster.

      I always cook mine with a wrap after smoking for 3 ish hours. I don’t see what an over night rest in the fridge between smoke and finish would change that up much. Other than taking a bit longer on the finish since they will be cold.
      Looking forward to the de-brief in these.
