I don't use binders for meat. For poultry I'll use a little grape seed oil, seems poultry needs a little help for even rub distribution. As Myron has said,"Mustard is for hot dogs.". Do whatever you are comfortable with, either method works.

If I’m pressed for time and don’t want to let a rub sit for a few minutes to stick I use a little olive oil or vegetable oil for a very thin layer, otherwise, like many others I don’t use a binder.
