Made batch of MH pork brine injection from the book, probably over a month ago. Still sitting in fridge. Looks and smells fine. I never go from raw meat back to original container, always took out what I would need to use. Book says “You can store unused brine in the refrigerator or freezer for months.”
So does this stuff keep well in the fridge or should I toss? It’s just stock, water, vinegar, Worcestershire sugar and salt. I wanted to use today on a pork loin cook.
I always look at the ingredient which I think would give the most trouble, and in this case it would be the stock. https://stilltasty.com/fooditems/index/16777 says 4-5 days refrigerated, but months when frozen. I’d start over myself.
