So I bought a pork belly and have little idea what to do now

    I simply like to smoke it as is with a solid BBQ rub. Sometimes I will go simple salt and pepper, other times I will make a sweet and savory blend or an asian 5-spice blend. All are excellent. Brisket and Belly are my favorite cut for sure.

    I make pork belly weekly. It is one of those special pieces of meat that was bestowed upon us by the BBQ gods!

    Pork belly burnt ends might be the single best smoked meat I've eaten. Malcom Reed and Susie Bulloch both have good recipes. And, bonus, you don't have to wait a week for them to cure!

        Thank you everyone for the advice. I am going start with Meathead's recipe and experiment from there. I need to get a finer mesh wire rack for the smoker to try the burnt ends.

          Everyone is suggesting bacon, and that's a good start. I'd save a little to make red-cooked pork belly. That was one of my mom's favorite dishes, and when she was dying she asked for it. I figured what the hell, it's not like the cholesterol was going to kill her.
