I simply like to smoke it as is with a solid BBQ rub. Sometimes I will go simple salt and pepper, other times I will make a sweet and savory blend or an asian 5-spice blend. All are excellent. Brisket and Belly are my favorite cut for sure.
I make pork belly weekly. It is one of those special pieces of meat that was bestowed upon us by the BBQ gods!

Pork belly burnt ends might be the single best smoked meat I've eaten. Malcom Reed and Susie Bulloch both have good recipes. And, bonus, you don't have to wait a week for them to cure!
