Pork Belly Burnt Ends—Water or not?

Attempting pork belly burnt ends tomorrow for the first time. 26” kettle, SnS. The recipes I have say nothing about water. Fill the reservoir or not? I’m thinking yes because we do for butt and ribs.

I make plenty PBBE and not ever used water. Don't have the experience to say if adding or not adding makes a difference. Don't see using water doing any harm though.
Enjoy the burnt ends it's a favourite around here. Even the wife who doesn't eat fatty foods enjoys them.

Definitely water. It’s not just for moisture in the meat, but helps stabilize the temperature and retain heat.

I also put something under them to catch all that dripping. Makes a big mess if I don't.

I use a drip pan for almost anything I grill/smoke indirect. Easy clean up for sure

Thanks for the advice. I will post the cook later. Was planning to start them this morning and have them for an afternoon snack after some yard work. Wife wants them for dinner. I cannot complain about a spouse who wants burnt ends for dinner. So, burnt ends for dinner.
