Attempting pork belly burnt ends tomorrow for the first time. 26†kettle, SnS. The recipes I have say nothing about water. Fill the reservoir or not? I’m thinking yes because we do for butt and ribs.

Definitely water. It’s not just for moisture in the meat, but helps stabilize the temperature and retain heat.

Thanks for the advice. I will post the cook later. Was planning to start them this morning and have them for an afternoon snack after some yard work. Wife wants them for dinner. I cannot complain about a spouse who wants burnt ends for dinner. So, burnt ends for dinner.
