Smoked Pork Loin Chops
Smoked at 225F to an IT of 145F. Dusted with Memphis Dust (salt version). Came out very flavorful and juicy. No smoke ring to speak of, but I guess there just isn't enough myoglobin in the loin. Served with my ubiquitous roasted carrots.
