    Pork Butt Bones and Fat - Uses?

    I just finished smoking two 10# pork butts this past week, and as I was pulling the pork, I was trying to figure out a use for the fat and bones. I have traveled to places where all of the animal is used in one fashion or another, so this is where my thinking has started. Right now, I am tossing both.

    Here are my general thoughts on the bones:
    • Toss them in the freezer, then roast them to make stock when I have enough
    • Make soup (I love navy bean or lentil soup made with pork)
    • Throw them away (I don't have a dog)
    Since the bones have already been in the smoker, roasting may be redundant.

    For the fat, I can only think of a few things:
    • Soap (not soup)
    • Render for cooking, but I already have plenty of bacon grease for that
    • Throw it away
    I've search past posts and couldn't find any advice. Any suggestions are greatly appreciated!

    Definitely soup for the bones, split pea is my favorite. For the fat, use to make sausage, bulk breakfast or Italian if you don't want to mess around with casings.

      Thanks, those are great ideas. I would like to make linguica, Brazilian style, since my wife is Brazilian and it is nearly impossible to find where we live.
