    Cooking Temperature For A Pork Butt

    Today I will be smoking a 14 pound packer brisket with the point and flat separated, and an 8 pound pork butt. I do not want to make pulled pork, I want sliced pork. What is the best temperature to cook the pork butt to so that it will slice instead of fall apart?

    Typically sliceable pork is best at 140-145 but butts need more temp & time because of all the tough fats. If I were doing one for slicing I'd take it to 180 and check it, maybe 190. 200+ plus a cambro hold would get it to the fall apart stage and you obviously want to stay this side of all that.

      I don't care for them sliced, but 180 sounds right to me. I suspect that 190 might make it more like pulled.
