It took me awhile to git at the 10# bag of frozen bacon ends I picked up at Nueske’s in late November when I wuz huntin. Did not know whut I wuz gittin
into til I opened up the bag and lo and behold there wuz big Ol’ honkin chunks of the end of thick Ol’ bacon. I took one look & thought Hog Heaven! Cooked up way more than I could chew. Have second meal waitin on me in the fridge.

I used to get bacon ends at Trader Joe's. They were a staple of my diet until I started smoking pork belly for myself.

Every so often I get a 5 pound box of bacon ends from Webster City (Iowa) Meats, Edgewood (Iowa) Meats, or Bakalars in La Crosse, Wisconsin. I cook them slow on the Weber gasser or Hasty Bake, then the thinner strips get frozen to eat just as bacon strips.
I put the thicker chunks, which can be rather tough to eat directly, into the food processor to make bacon bits. Those are soooo good used as a seasoning -- simmered into baked beans or scattered on a salad.

I of course love smoked meats of all kinds, but also like quick cooks like chicken portions, pork tenderloins, steak and fish. Really into cooking of all kinds.
My outdoor kitchen has a Lone Star Grillz Adjustable and it is wonderful. There also is a Pit Boss 5 Burner Ultimate Griddle and a Pit Boss Copperhead pellet grill.
There is an outdoor fire pit that has grilling capability and limited Santa Maria-style grill raising and lowering.

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
I've started dicing up the bacon ends from when I cut and pack my own home cured bacon for the freezer, and keep the bacon ends for making beans and such. I can see though that they would make a nice meal too! Makes me hungry...

Save A Lot on S Main, across from Gillies, will sometimes have boxes of Nueske’s bacon trimmings. Same sort of thing, a #10 frozen box of random sized pieces. Last time they had them they wanted $20 for the box, and I got the last one. If and when I see them again, I'll give you a shout.
