I literally just discovered this and I need to try it. My question is it looks like you usually use a boneless butt. I was wondering if you could use the picnic should cut instead. Wondering if anyone has done that.

Picnic is typically leaner than pork butt so while you could use it, that would be closer to back bacon in texture. If you're after the leanness, use pork loin. If you just don't have a boneless pork butt I'd either buy one or I'd remove the bone from one you have.
I'll give my standard advice in cases like this. When trying something new, do it the way the recipe(s) say so you get a feel for the 'right' way (or at least A right way). https://jesspryles.com/pork-butt-bacon/ would be one recipe.
