    Fast n hot ribs!!!

Went fast and hot with these spare ribs last night , used about 1.5 chimneys of kbb , closed bottom vents, removed water pan and left lid open flipping and rotating every 5 minutes , I moped them about every 15 minutes. These only took me 55 minutes and they were absolutely fantastic, I got more compliments on them than when I go low n slow, rubbed with a little mmd and bbbr.

I'll assume you opened the bottom vents, versus closed them? Or did the open lid allow enough oxygen into the fire with the bottom vent closed?

Back in the day (like 1989) I remember cooking ribs hot and fast on an old H burner Sunbeam gas grill from K-mart, as I didn't know how else to cook them. I've not tried it since getting an offset around 1996.

This is how my buddy across the street grills ribs. Unfortunately I haven't had a chance to try them yet. It's worth noting however he often gives me ribs to smoke for him.
