    3 little pigs

    So a young lady that helps in the locker asked if I could cook some pulled pork for her daughters 1st birthday party.. tomorrow as soon as I get up these three hog will go on the smoker they are various sizes from about 70 lbs live to 150 live weight..should be fun I have Ben itching to cook some pigs on the roaster..       Well looks like this is two cooks!! I broke the pigs Down to make it easier to get off the smoker when done, but was only able to get two pigs worth of front shoulder and ham on . Click image for larger version

        Is that a Hobart 1612 in the background? A buddy gave me one a couple of years ago that was all frozen up. A couple of hundred bucks in parts and a little elbow grease and that thing runs like a champ. They do not make them like that any more. Oh, and this looks like a really fun cook!!

        CaptainMike that is a 1712 automatic slicer. I bought it for 125$ they said the automatic didn't work and it was filthy. A little adjustment and a bunch of elbow grease and it has sliced thousands of pounds of bacon for me. Yup that thing is a workhorse. I just purchased a berkel slicer stacker but can't bring myself to get rid of the old Hobart.. I guess I will probably retire it to the garage just in case something happens to the other on..

          75-100 she said. We will eat the rest for lunches and the neighbors have all been staring and honking as they drive by.. I am sure a few will stop in for a sample!!
