Holy Moly, would you look at this. This was a Pork Breast Rib I did about a week ago. Just over 2lbs. Smoked in the Monolith over hickory for nigh on 6hrs and then rested for a further hour. I think it was a little over cooked to be honest but it was extremely good all the same. Reckon half an hour less next time and it should be damn near perfect.
