        gardenfish I'm curious why you tinker with the vents when it goes just a few degrees off 225?

          The couple times I moved the vents the temp was what I thought to be either steadily dropping or steadily rising so I wanted to stop that from happening and stay as close to 225° as possible. The temp went higher or lower than what I posted when I changed the vents but changing brought the temps back in the right direction before the next log entry. Hope that makes sense.

            Aright. I used to do that way back when but I stopped. I only mess with them if temp seems to dip below 200 or going past 275. Once I stopped I noticed that I rarely go higher than 250.
            I only asked because unless you're running a stick burner, don't stress too much trying to keep it at 225.

              On my 6 pork shoulder smokes I did exactly as you say. I noticed most of the time it went to around 250° or so, a couple times to 275°. Then after a few hrs it dropped and when it got to 210° I either opened vents or added more lit coals or both. This was my first run on ribs and I wanted to see how close to 225° I could stay and for how long with minimal effort. I only moved the vents 2-3 times in the 6 hrs and I think that is minimal.

              This was more of a test while I cooked the ribs for future smokes. I want to cook my first brisket as close to one temp as possible. Next rib smoke I will probably do the same with just 1/2 hr log temps and then the next time probably 1 hr log temps.

              This was the first time I actually counted the bricketts and it was interesting and a great learn for me on how my smoker works. This is the 2nd smoke I think I have done since putting on the gasket kit and I am finding it is easier to maintain the lower temp with the vents. Before the gaskets and with the leaks in the WSM I found that vents didnt hep me control temps as much as I wanted.
