Pizza cheat

Here is a pizza cheat recipe from Kenji. I'm wondering if You could do this over direct heat in a grill and then transfer to the oven for browning. He has another recipe here using two tortillas. I want them both for breakfast...

Direct heat, and then close the lid. Would work on a gasser.

I have made these several times on the stovetop and oven. Very good, easy, quick meal!

Skip the sauce and the toppings, 'cept for the cheese, and we call that a cheese crisp in my neck of the woods.

Do the same thing--top the tortilla with cheese--and throw in the microwave for a bit. You get what I call a "cheese sog". My idea of an original recipe--

Or just fold the tortilla in half with cheese inside, and you have a quesadilla. Should I call it fusion food if I add pepperoni and salsa?

I've made those but I prefer using a comal rather than a skillet. Easier to work with the tortilla:
