I followed the idea from bbq-heroes.com
this was my third try. The first one was dang good! The next two, not so much.

I was doing wings, too. Probably my downfall as I kept peeking at them and turning.

Thanks for the pics of your setup. I can do that. I always thought I needed fire bricks

I have an old Hovergrill raised grate that I use to lift the pizza stone - a Lodge CI pizza pan for me actually - up higher in the dome of the kettle or kamado. Works well. but I can see the bricks doing the job for free.

Using some of the same thinking I fashioned a "pizza oven" in my gas grill about 6 years ago just to see if it would work. Fire brick is a wonderful thing...

I did something similar to Uncle Bob. 1/4” steel plate, seasoned, for the pizza steel, 16 ga steel as the oven ceiling and fire bricks around the perimeter.

Good timing on this. I was recently looking at doing something similar with the Blaze because I think it can get hot enough to function as a pizza oven.

The only time I made a pizza in the grill was when I made a deep dish in a cast iron skillet like Pizzeria Uno. It turned out good too.

is there something special about firebrick that works better than, say, traditional house brick?

Less chance of breaking apart from the heat.

Yeah regular bricks can actually explode under high enough heat.

I have also used a smaller pizza stone on the upper rack of the gas grill to serve as the upper heating element. Worked well, too. But the gas grill is misbehaving lately and I haven’t gotten around to figuring it out, prolly operator error.

Stand down soldiers!! The wings were supposed to be on the perimeter, but they were whole wings and they didn’t fit. Guess I need a larger weber kettle!
