Retired, living in Western Mass. Enjoy music, cooking and my family.
Current cookers Weber Spirit 3 burner with a full insert griddle added. A 22" Kettle with vortex, SnS and a Smokey Joe. The most recent addition is a Pit Barrel Jr with bird hanger, 4 hooks and cover. ThermoWorks Smoke 2 probe, DOT, 2 ThermoPops and a Thermapen MK4. A Thermoworks RFX Gateway 2 probe meat thermometer.

I've made them over a campfire on a pizza stone and using a metal trash can lid. The lid is a bit larger than the stone so that I can capture some top heat. Not perfect but lots of fun with everybody making pies and having a good time. I call it Trash Can Pizza. About the best pizza you will get remote camping.

Weber Summit Kamado with SnS and Vortex.. Broil King Baron, Primo Oval Junior. Primo XL. Love grilling steaks, ribs, and chicken. Need to master smoked salmon. Absolutely love anything to do with baking bread. Favorite cool weather beer: Sam Adams Octoberfest Favorite warm weather beer: Yuengling Traditional Lager. I've never thought of doing this on my PBC. Do you adjust the basket height any......leave the lid off?

Michael_in_TX I just use the grate, with no bars, and lid on.
I also rotate the grate halfway through the cook.
I try to get @375 ambient.
