A little restaurant near us has a Friday takeout special each week. Yesterday it was Tomato Pie.
We never heard of this before, so Mrs. H and I ordered one. Oh my. 🥰 How have we missed out on this all these years!
Have you experienced this delight?
Anyone have a recipe for your version?

We had Tomato Pizza Pie last night.
A Digiorno self rising crust cheese pizza, with fresh tomato slices and a little extra mozzarella cheese.

We make this in the summer and it is delicious, there is the original recipe and the modified recipe (i think is for keto) love this with a side of blackened grilled chicken

Here in NEPA it means a cold, soft crust pizza with scamutz cheese (scamorza), sold as single squares wrapped in plastic at convenience store counters or as quarter trays sold in boxes at grocery stores.

It is much better than that sounds. There’s a nice, sharp bite to it, and afterwards your fingers have that umami smell like from Parmesan cheese.
