    I also like to make up a batch of the Texas mop sauce. It's nice to put a little on whatever bread you use.

      I agree with Steve R. on the potatoe salad. Some great wine makes a good side as well.

        Dang. The day crept on me, and keeping track of Jaco, Mia, and Isla was a full time job. I did manage the cornbread and collards - pics on the way. I'm saving this thread in my "want to cook" folder in gmail. You guys are great - thanks so much.

            Cole slaw, summer tomatoes. I figure it has to be a bit on the light side, brisket is very filling (because it’s easy to eat a lot of it).

              I'd say Ice Cream goes great with Brisket, or more accurately, after Brisket.

                I always tell my wife bbq requires ice cream. Haha love it.

              This was the first prime grade brisket I've cooked. I must say, it might have been the best thing I've ever eaten, certainly the best thing I've ever cooked. The Collards were from a Paula Dean recipe and the cornbread from my mother-in-law's recipe. Both were fantastic. I prefer cornbread with a coarser meal and less sweet, but I chucked in some diced jalapeno and that made it nice. Thanks again everyone!
