This recipe my wife made was a real crowd pleaser. There was none left after 8 guests. INGREDIENTS
- 2 1/2 cups chicken stock
- 1 box couscous (10 oz)
- 1 tbsp ground cumin, ground coriander and curry powder
- 1/2 cup extra virgin olive oil
- 1 cup golden raisins
- 2 shallots ( chives)
- 1 small red onion
- 3/4 cup chopped walnuts
- 1/2 cup flat leaf parsley
- 2 tbsp fresh mint
- INSTRUCTIONS
- Bring chicken stock to boil
- Remove from heat
- Stir in couscous w fork
- Cover pan set 3-4 min
- With fork stir in curry coriander cumin
- Stir in 1/4 cup olive oil, raisins shallot /chives, onion and walnuts
- Season w salt/ pepper
- Stir in remaining olive oil, parsley and mint
