    Spiced couscous with golden raisins and walnuts

    This recipe my wife made was a real crowd pleaser. There was none left after 8 guests. INGREDIENTS

      • 2 1/2 cups chicken stock
      • 1 box couscous (10 oz)
      • 1 tbsp ground cumin, ground coriander and curry powder
      • 1/2 cup extra virgin olive oil
      • 1 cup golden raisins
      • 2 shallots ( chives)
      • 1 small red onion
      • 3/4 cup chopped walnuts
      • 1/2 cup flat leaf parsley
      • 2 tbsp fresh mint
    • INSTRUCTIONS

      1. Bring chicken stock to boil
      2. Remove from heat
      3. Stir in couscous w fork
      4. Cover pan set 3-4 min
      5. With fork stir in curry coriander cumin
      6. Stir in 1/4 cup olive oil, raisins shallot /chives, onion and walnuts
      7. Season w salt/ pepper
      8. Stir in remaining olive oil, parsley and mint
      9. Awesome

      Funny, that's how I am with pineapple. Love it fresh. Hate it canned, hate it in anything, hate pineapple juice in anything.

      DITTO! to the raisins and pineapple. I'll eat 'em, don't need in anything else, especially oatmeal cookies and cake.

      Sounds delicious, troymeister . It looks like you used regular (and not Israeli) couscous?

        That sounds delicious! Just to clarify troymeister, is it one TBSP each of ground cumin, ground coriander and curry powder? Or is it 1 TBSP total of the 3 spices mixed together?
