Trying some smoked deviled eggs out of my MES for a party tomorrow. The book says smoke till "bronzed". I think I nailed that part. Click image for larger version

LOVE deviled eggs. I pictured you smoking them after they were made up.

We had numerous chickens that could lay eggs that color. Come to think of it , I always wondered why there were empty cigarette packs in the chicken coop from time to time. Hmmmmm, you may be on to something.

It took a lot longer to get color on them than what he suggested in the book. It was about an hour and two loads of chips instead of 25 minutes. Don't know what kind of smoker he's using but I doubt many would do it in that short of a time.

What was left of them. Turned out very good with a nice smoky flavor that wasn't overpowering

For those of us who do not have Steve's book, he's graciously provided the recipe on his site:

A great appetizer for Passover, this deviled egg recipe by Steven Raichlen adds a smoky flavor to the classic dish, and offers plenty of ideas for toppings.

                    Thank you, Steven!!!

Meathead smokes his eggs raw at 225 deg for an hour for this recipe: http://amazingribs.com/recipes/snack...egg_salad.html

He also smokes peeled hard boiled eggs, he says in the preface to the recipe, but doesn't give specifics.

Those look fantastic. Thanks for turning me on the them. I'll have to cook up a batch this thanksgiving and see what the family says.

There's a somewhat obscure link to the ways to smoke them on the link that Mr. Bones provided:

Easter and Passover remind us that eggs possess religious symbolism and significance. They’re also great grilled or smoked. How do you grill or smoke eggs?
