    Looking for a side dish to take to Wingfest.

    We are having our annual Wingfest / Wings of Death challenge next weekend (8-12). Looking for a side dish to take that doesn’t need kept cold or kept warm. I’d like to arrive and set it on the table and it be good to eat for 5 to 6 hours. It doesn’t have to be something that goes with wings.

    Thanks for any suggestions

      How about cucumber salad? Can go any number of ways, Korean, Chinese, German, Japanese etc and all would work really well with spicy wings.

        I was thinking a baked good but with some hidden spice if you will. Basically, someone has just eaten a hot wing and wants to cool off and then bam, we hit them with something like this:



        I am sure you can probably add your own peppers. You could probably do the same with a nice homemade bread.

          Homemade-Mayo Potato Salad, of course!

          Actually, what I've really been enjoying lately with wings as a side is some form of grilled corn. The intense heat caramelize the sugars and gives it that unique flavor. That might be something that could stay at room temp, safely, for several hours.

            One of the participants always brings a large pan of his corn soufflé. So good. So tasty. I’ve already spoken to him and he’s bringing it again.

                The real challenge here is something that can be left sitting on a table for 5 or 6 hours with out heat or cooling and still be safe and good. I’m leaning toward something sweet. I like sweet and heat together. This may be one of the very few places where sweet pickle spears might be a good thing. The tang from the vinegar won’t hurt either. It’s one of the few things I can think of that meet all the criteria.

                  So far, nothing other than the crackers and can of cheese wiz, or some bread or chips, is safe to sit out on a table for 5-6 hours without being kept warm or cold... even the Mac and cheese idea won't be safe after a couple of hours sitting on a table. Pasta and rice are especially prone to becoming toxic left out...

                    A vinegar-dressed cole slaw would work. This salad, which has been an every other day go to for me, would work too. I leave the optionals out and I scale it down for one tomato.

                    Greek Horiatiki Salad

                    5 large tomatoes
                    1 small red onion, thinly sliced
                    sea salt to taste
                    1 ½ teaspoons dried oregano
                    1 small green bell pepper, sliced (Optional)
                    ½ medium cucumber, sliced (Optional)
                    ¼ cup Greek black olives
                    3 tablespoons extra-virgin olive oil
                    1 (8 ounce) package feta cheese

                    Cut tomatoes into wedges over a large serving bowl so that any extra juices land in the bowl with tomato wedges. Add onion slices and oregano, then season liberally with salt; mix to combine. Allow tomatoes to sit at room temperature until juices have released, at least 20 to 30 minutes or up to 2 hours.

                    Mix in bell pepper, cucumber, and olives just before serving. Top with feta cheese and drizzle with olive oil.

                    Don't skip the salting and resting step! The tomatoes' acidic juices combine with the olive oil to make the perfect dressing, with no need to add vinegar or lemon juice at the end. To encourage the juices to release, give the tomatoes an occasional stir while resting.​
