It would be the greatest side if he wrapped them in bacon!

      LMAO ..... okay, that's legit

That's pretty creative. The only thing I'd change in the setup is I'd use a saucepan lid instead of the bowl. Lifting with a knob/handle would be easier.

You're always figuring out the better way to do a job. I like that! Good call with the small pan lid.

I was amazed at the amount of cheese sauce used, although by the end, I couldn't figure out where it went, the law of conservation of matter being what it is.

What I really like is the presentation.

Only thing I have to say is "Why didn't I think of that?" At first I thought you cooked that Eric, regardless that is indeed legit !!!

I wish I had come up with this ..... thinking who needs this as a side, let's just have it for dinner!

I like the idea, but those giant shells stuffed with brisket are not what my kids would consider "Mac and cheese". They expect elbow macaroni.

My issue is I would need to smoke a brisket just to make this side, haha. I guess I can trim off some before the cambro hold, and then go make the Mac and cheese...

I would say you could use leftovers, but who has left over brisket?

Wow! I’m practically speechless. That looks incredible. My darling wife would probably,`wisely, veto the idea. But wow.

Wow, that looks great but.... I think it's a full meal, not a side. Sheesh.

I'm looking for a side dish at the moment. This would be the whole meal at my house.

Velveeta on anything is a mortal sin in my religion. I do like the stuffed shell idea and would like to give it a go.

This is so clever! It would be a perfect hot appetizer. As I said on another topic, the cheese dip could be served on the side with the BBQ sauce.

It could even be a cold appetizer with the brisket and cooked shell only on the tray with the warm sauces on the side.

For the cheese sauce, I'll use this recipe, which has worked well for me in the past.

This ultra creamy sauce is made from lager beer, milk, cheddar cheese and spices and is perfect for dipping or topping your favorite foods!

            I just Paprika-ed it.

If that’s the side I can’t waite to see the main course.
