Started running my offset stickburner at 250-275°F after reading Aaron Franklin’s book 3-4 years ago. Faster cook times, yet plenty of smoke flavor and nothing dried out.
Live wood fire likes to run a little hotter. Since there’s more moisture in the wood vs charcoal or pellets you’re safe.
You are wise to not chase 225F on your offset. I don't have a good offset, but have found that it likes to run around 275F, and its a struggle with almost closing all air vents and snuffing the fire to get it to run at 225F. I've learned to let it run where it likes to run.
jfmorris Agreed. If you are choking down vents to control temps in an offset your fire is too big. Gotta let that fire breathe and crest good clean smoke.
