One of my favorite foods is (heavily Americanized, to be sure) Thai Chicken Fried Rice. You know the one that you order and get to say silly stuff like "spicy level 10!"
We have a Thai place nearby that delivers and the portions are quite large, so I can get three servings out of one meal (keeps the costs down, too). Still, I've been mindful of trying to make this quickly on my own and make it a bit healthier.
Due to often having meetings in different timezones, my time for making lunch is quite short. Since March, I've stumbled upon this method using some ready-made and frozen ingredients.
Tyson makes these frozen fully-cooked oven-roasted chicken that are diced. Also, Minute Rice makes these pre-cooked cups of brown rice.
So what I do is take about a cup of the frozen diced chicken and place it in a bowl. I microwave that for 2:15. I then place the brown rice cup in the microwave for a minute and while that is heating up, I very generously dust the now-hot chicken with a salt-free (the chicken and rice has enough salt as it is!) Spicy Thai Seasoning blend from Spices, Inc. I then augment that with a nice dusting of crushed red pepper. I then add about a tablespoon of extra-virgin olive oil. I follow all of that up with a dusting of Kraft parmesan cheese.
Once the rice is done, I dump that on top and mix everything up. It is really quite good and delightfully spicy.
I've also started to incorporate steamed chopped carrots into it when I can remember to do so.
