What have you cooked that surprised you with how much better it turned out with smoke, other than the normal ribs, ham, bacon, jerky, roasts, etc? I'm looking for some interesting things to try. For myself, whole beef shank, octopus, ham loaf, even meatloaf, all turned out better than I ever expected, and one or two of those are not widely done. I am wondering about fairly basic things, not complicated recipes. But unusual recipes would be fair game.

I of course love smoked meats of all kinds, but also like quick cooks like chicken portions, pork tenderloins, steak and fish. Really into cooking of all kinds.
My outdoor kitchen has a Lone Star Grillz Adjustable and it is wonderful. There also is a Pit Boss 5 Burner Ultimate Griddle and a Pit Boss Copperhead pellet grill.
There is an outdoor fire pit that has grilling capability and limited Santa Maria-style grill raising and lowering.

Sweet Corn. I use two bags of frozen corn, I smoke one bag for about an hour and add to the other to make this recipe.
Smoked Cream Corn
2 tablespoons unsalted butter
5 cups frozen corn, thawed
1/2 cup heavy cream
3/4 teaspoon kosher salt
1/2 teaspoon freshly cracked black pepper
1–1/2 tablespoons granulated sugar
Pinch cayenne pepper
Pinch ground nutmeg
1 cup whole milk
3 tablespoons all-purpose flour
Melt butter in a medium saucepan over medium heat.
Add corn, heavy cream, salt, pepper, sugar, cayenne pepper and nutmeg.
Stir to combine.
In a small bowl or large measuring cup, whisk together the milk and flour. Pour into corn mixture and stir to combine.
Cook, stirring constantly for 4-5 minutes, or until thickened and corn is cooked.
Season with additional salt, pepper, sugar, cayenne pepper and/or nutmeg if desired.
