I have reached a BBQ milestone, and right on schedule!
I joined here late in the evening on December 25, 2018. Without this place, I would have given up after just a cook or two.
But, I think it is fitting that close to my one-year anniversary, I have reached another milestone: I can't fit any more meat in my freezer. No, seriously, I have tried. We are at the limit. I say this as one who was quite adept at Tetris back in the day.
I keep telling my wife we need to replace the French door fridge with another one. I keep pointing out that the ice maker is pathetic. It is HOT here and we often run out of ice. So we " need" another one with a larger ice capacity. And an a two door/shelf freezer. And magnetic stainless steel doors so stuff sticks to it.
and the old french door fridge? It’s not worth selling it, so might as well keep it. Right here in this space I cleared out in the garage. I can keep beer in it. Also a 5 gallon bucket for wet curing things like corned beef.....
This guy knows how to marriage. Selling it with a straight face is the hard part, minor critique less logic more feelings. Missus can pick apart logic, but no ice for the little one on a hot day when the HVAC breaks? Can’t argue that can she?
I freely admit to looking at chest-type freezers online. But it would have to be out in garage.....urk....our electric bill is already so high in the summer!
Started Low-N-Slow BBQ in 2012. Obviously, it's taken hold (in chronological order:
1.) A pair of Weber Smokey Mountain 22.5's
2.) #LilTex, a 22" Expensive Offset Smoker (looks like a Yoder Witicha)
3.) #WhoDat1, a HUGE Gravity Fed Insulated Cabinet Smoker (cooking chamber 3'x2'x6')
4.) A Full Size Commercial Dryer/converted to Vertical Smoker.
5.) Jambo Backyard stickburner (my FAVORITE Pit so far)
6.) GrillMeister, a huge 24"x48" Adjustable, Charcoal Grill from Pitmaker.com
7.) 22" Weber Kettle with Slow-N-Sear
8.) Vault insulated reverse-flow cabinet smoker from Pitmaker
9.) BarbecueFiretruck...under development
10.) 26 foot BBQ Vending Trailer equipped with HUGE Myron Mixon 72xc smoker is HERE, Oct 2016!
11.) Opened www.PaulsRibShackBarbecue.com Food Trailer officially in March 2017
12.) Austin Smoke Works 500 Gallon Propane Tank Offset Smoker, named "Lucille" as travel pit for PaulsRibShack, Oct 2018.
12.) Opening Brick & Mortar location at 4800 Nelson Rd, Spring 2019. Had a pair of 1,000 Gallon Austin Smoke Works pits, both in RibShackRed for our new place!
Fabulous Backlit Thermapens, several Maverick Remote Thermometers (don't use any remotes anymore), Thermoworks Smoke, Other Thermoworks toys, Vacuum sealer, lots and lots of equipment...
I'm loving using BBQ to make friends and build connections.
I have #theRibList where I keep a list of new and old friends and whenever I'm cooking, I make 1 to 20 extra and share the joy.
I’m copying all these responses to prove to my wife that I am not alone and that we DO need a dedicated freezer. Thanks Michael for getting me into as much trouble as everyone else does on the site! Happy Anniversary. HA!
rickgregory and ComfortablyNumb - Hahahahahaha. My freezer (side by side fridge/freezer) is packed with "sales meat". When I bring up the freezer subject she says, "Why would we spend money to save money? You would just buy more meat and you can't go through what you have. You are already a BBQ hoarder". I did show her the post. She rolled her eyes and took a steak out of the freezer. "There" she said "You have room for more meat."
When I first saw the thread title I thought you were going to tell us your MCS had been chuggin' along well enough to have filled your patio/deck/yard/garage to capacity with various cooking devices. A full freezer only means you've just reached half way there. More toys...…...more toys...………….no man (nor some women) can have too many toys.
