    I bought a prime rib roast at the last minute on Christmas Eve that I will cook on Christmas. I'll probably smoke some potatoes to go with it.

      Preparing traditional Norwegian Christmas dinner as we speak..
      Porkribside/belly served with pork meatballs (medister) sausages, sauerkraut and red cabbage, almond potatoes and a ribsauce ør rendered fat alongside..

        fracmeister I got that same brisket dry aging ready for New Years meal. Those HEB Wagyu are really good. I cut off the thin flat and made pastrami out of it, that was even better

          Christmas Eve found me doing a near impromptu cook of 4 thick NY strips from my stash in the deep freeze. I knew at lunch time that we would have a couple of the kids over on Christmas Eve, so pulled them out, defrosted on the counter and dry brined. At 7:30pm I coated them with Hard Core Carnivore BLACK, and cooked indirect at low on the Genesis, searing for a couple minutes on the direct side to get the thickest one to medium rare.

          Sadly no pictures, but the Hard Core carnivore BLACK is now everyone’s favorite steak rub!

          EDIT: A day late picture of leftovers, to prove to Dewesq55 that the steak happened!

            Brisket flat, top left. Cubed brisket point burnt ends, top right.
            Bottom is pork bellies - not for eating today, just smoking while I have a fire going.
            In a bit, I’ll be adding cured pork loins and banger sausages.

                Brined a turkey breast in a mixture that included maple syrup and bourbon; grilled it on the Grillworks. Brined two thick pork chops and then smoked them in the KBQ. Finished them up with an ancho chili rub on the grill.

                USDA prime rib roast. Sous vide 8 hours at 136. Rosemary crust. Just oven sear. WIll smoke the ribs later
