The most recent addition is a Pit Barrel Jr with bird hanger, 4 hooks and cover. ThermoWorks Smoke 2 probe, DOT, 2 ThermoPops and a Thermapen MK4. A Thermoworks RFX Gateway 2 probe meat thermometer.

He's Chinese not Tibetan, but it certainly looks like Tibet (I lived there for a year in the early 90s). My Mandarin is rusty and his accent & shouting don't help. If it is Tibet, then the meat would be most likely yak, but it's not clear to me whether it's yak or regular cattle. I'll watch it a few more times and see what I come up with.

OK - here's what I think, but I could be wrong.- I'm pretty sure it's regular beef, but it might be yak
The rub- Not sure yet - if anyone has ideas based on what it looks like, I can try to check it in translation
- I can't catch the first sylllables, but the last are lajiao, which is chili pepper. So based on appearance, let's go with paprika as a translation.
EDIT: Actually, that's probably not the best - paprika is typically mild, but lajiao is always hot peppers. It would be more like cayenne powder. - Sea salt (hai yan)
- Sichuan pepper (huajiao)
- Peppercorns (hujiao) - obviously ground
- I think he's saying lao chou, which is dark soy sauce
- I'm pretty sure it's sesame oil (zhimayou) even though he says something not exactly that (humayou?)
- Oil (probably rapeseed aka. canola)
- I don't know what the cubes are. I thought maybe some kind of tofu, but he definitely doesn't say that
- Looks like a mushroom/fungus of some kind, but I don't know the word he says
- Peppers
Edit: I think the powder is some kind of seasoned salt (last syllable "yan" but I don't know what he said before that)
