      I love pork belly (have I mentioned this before).

      At the moment either burnt ends or pork belly rashers. I cut the rashers about an inch thick rubbed with MMD that has some chilli flakes added. Cook at 130C for about 2 hours and then crank the heat up to 180C till probe tender and coat near end of cook with Huskee's Original Shawsh that has some Tamarind added.

      Sides
      Potjie pot potato bake and store bought creamed corn and roosterkoek or garlic bread.

      Dessert
      None just don't have the room

        Smoked Prime Rib with potatoes similar to the OP’s hobo potatoes. I just use a mandolin though and one cookie sheet lined with foil with onions, salt, pepper, and too much butter.

            I share the love of ribs but have to put a vote in for straight up chicken thighs finished with a decent sauce!

              I'll have to go with a classic, a nice rare rib eye steak, loaded baked potato, fresh corn on the cob, blueberry pie.

                St. Louis ribs, pulled pork, pork & beans smoked with the ribs, that has my own bacon it it, and maybe my wife's potato salad with smoked potatoes.

                I would have to say KBQ smoked Wagyu brisket with a simple Dalmatian rub. Sides would be Ground Lamb Tator Tot Casserole (Extra Crispy tots) Sever's Fresh Sweet Corn made with Sweet Corn right off the stock. Cast Iron Sprouts pan fried then baked with Ghee butter, pine nuts and lardons.
