Gonna be cooking up some ribs. Still trying to figure out how many people will be here, how many racks I need to cook, and which cooker I will be firing up. Guessing there will be a lot of the standard sides (deviled eggs, beans, chips, potato salad, etc.) but not sure on that yet.

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
My menu includes:
- Smash burgers (probably 50 or so of 'em)
- Nathan's hot dogs
- Johnsonville Brats
- 3 slabs of baby backs, blasphemy style, as an "appetizer".
- Smoked Mac and Cheese
- Home made ice cream
Those are the things *I* will be in charge of. The women folk will have lots of chips, dips, sides, fruits, watermelon, you name it, in the house. I was going to do chicken wings, but decided I just don't want to go to the extra effort. I'm scaling back. Two years ago I think I did 8 meats on July 4th! (Ribs, brisket, pulled pork, chicken wings, chicken tenderloins, burgers, brats, hot dogs). After cooking from the night before until about 2PM on the 4th, I was worn out! The above menu only requires me to get the ribs going on the kettle 2.5 hours or so before lunch, maybe with the Mac and Cheese below the ribs on the charcoal grate level, and everything else is hot ant fast on the gasser...

Was a waitin on tomorrow's new sale ads, from alla th grocers, but recollected that Dillons still had 'Natural' BBRs, an Spares, fer $1.99/lb., so I went to th store, long bout 2000, an grabbed some, so these will be th official start to my Independence Day Menu...
New week ads come out at 2400, tonight, so let's see what they got goin on...
