    2 prime Packers trimmed, injected, dry brine, slathered in hot sauce, and covered in BEV0 Bark. Into the pit at 225° over mesquite, so it can "love 'em long time"!

            Gonna be cooking up some ribs. Still trying to figure out how many people will be here, how many racks I need to cook, and which cooker I will be firing up. Guessing there will be a lot of the standard sides (deviled eggs, beans, chips, potato salad, etc.) but not sure on that yet.

                I shall be serving the bitter tears of our British cousins in tumblers with American bourbon. Perhaps there will be firearms and Cool Whip as well.

                  My menu includes:

                  - Smash burgers (probably 50 or so of 'em)
                  - Nathan's hot dogs
                  - Johnsonville Brats
                  - 3 slabs of baby backs, blasphemy style, as an "appetizer".
                  - Smoked Mac and Cheese
                  - Home made ice cream

                  Those are the things *I* will be in charge of. The women folk will have lots of chips, dips, sides, fruits, watermelon, you name it, in the house. I was going to do chicken wings, but decided I just don't want to go to the extra effort. I'm scaling back. Two years ago I think I did 8 meats on July 4th! (Ribs, brisket, pulled pork, chicken wings, chicken tenderloins, burgers, brats, hot dogs). After cooking from the night before until about 2PM on the 4th, I was worn out! The above menu only requires me to get the ribs going on the kettle 2.5 hours or so before lunch, maybe with the Mac and Cheese below the ribs on the charcoal grate level, and everything else is hot ant fast on the gasser...

                    Ok I just came back from Costco with propane and pork belly! I didn't like a single packer brisket I saw - the flats were all so thin, I decided to pass on all of them. Sooo... now I am debating, cure the pork belly for bacon, or make pork belly burnt ends instead of ribs on the 4th!

                    After spending $250 at Sam's club this morning, mostly on food for tomorrow, I nixed the ribs. I'll be making pork belly burnt ends for sure, with the 9# of pork belly I got at Costco yesterday!

                  Burgers, Brats Corn on the Cob and potato salad. (How I was raised) Friday Meatapalooza grilled appetizers - chicken feet, grilled baby octopus, slaw.. then lamb chops with grilled asparagus beets and spuds as main

                    Not a clue... I'm not even sure where I'll be yet...so the destination will determine what gets cooked. If I cook outside at all.

                      Was a waitin on tomorrow's new sale ads, from alla th grocers, but recollected that Dillons still had 'Natural' BBRs, an Spares, fer $1.99/lb., so I went to th store, long bout 2000, an grabbed some, so these will be th official start to my Independence Day Menu...

                      New week ads come out at 2400, tonight, so let's see what they got goin on...

                        I like it how the last "natural" butts I had bought at the local Kroger had injections of brine - I guess they get away with that as salt is natural - just not in the meat in my opinion!

                      I am doing three racks of St. Louis ribs I picked up from Costco the other day, I’m going to do them QVQ style and see how that goes.
