    Best short smokes

    What are the best things to make on short smokes? I can barely get out there to use my WSM. Any tips on things that work well on 5 hours or less smokes?

    Pork loins and tenderloins, beef & pork ribs if running higher than 225 - maybe 250-275. Meatloaf!

      Macktechie both loins (about 4-5" in diameter) and tenderloins (about 2" in diameter). My final temp on both is about 140-145 so they're short cooks.

    Cheese, pasta, nuts, burgers, thick steaks, pork tenderloin, chickens both whole, and various cuts, turkey, salmon and other fish, meatloaf, country style ribs, thick chops, on and on and on, lol.

      I cook most things in under 5 hours. Dial up the heat!! Sunday I cooked a big pork belly to the point where you could pull it easy. Scraped some of the bark off while cooking and you could see the fat boiling. 350F in 2 hours Here's a brisket I done in just over 4 hours

        With you on Pork Bellies. I smoke plenty at higher temps and always done in 2 - 3 hours and always juicy and tender delicious.

        Does pork belly get tighter like bacon? My wife had pork belly tacos at a Mexican place. She didn't like how jiggle fatty they are. ( I know the struggle is real.)

      Baby Back Ribs. Chicken parts. I've been doing BBQ leg quarters recently. An hour to get the smoker up to temp for chicken, about an hour in the smoker with 1 or 2 chunks of apple or pecan for flavor, then finish on the gasser with my homemade BBQ sauce. I usually make extra because they are good leftover, either heated or cold.

          Remember smoke sticks to cold wet things. So smoke /partially cook the meat and by the time you are halfway through the cook the meat is not going to absorb much more smoke. Drag it inside and fling it in the oven to finish it off. easy peezy!!!

                Catfish fillets, seasoned, smoked for about 45 minutes around 250 F make for delicious sandwiches!

                Meatheads schmancy hot smoked salmon takes an about an hour to smoke.

                  Brisket, chuck roast and pork butt are really the only meats that are really difficult to smoke within a 5-hour window. Everything else....let 'er rip and have fun.

                      Post the "recipes" for peanut butter stuffed jalapenos. Cream cheese can stend up to heat, but peanut butter? Does it not melt and run out during the cook?
                      Sounds like a good idea, creamy or chunky?
