    My second all smoked out dinner.

    Saterday April 21 will be my second "all smoked out dinner". From beginning to end every dish has been smoked out. I don’t have all the details worked out but we are 85% there. Apps are 24hr cold smoked lox with several smoked cheeses all cold smoked 3 weeks ago. Dinner is 50 day dry aged prime rib smoked over my log cooker then seared to finish with pastrami short ribs. Yes pastrami shorts. Never made them before. I may be the first. If not I would love cooking advise, times especially. We finishe with a smoked chocolate bread pudding pie and prickly pear pie cooked on the grill À la mode with smoked vanilla ice cream. At least that’s the plan. Here are some before pics. Let me know what you think and keep me in your smoke thoughts. I’ve got 14 hungry folks coming for the big meal.

        Thanks. I hope it is. I’m not sure what it’s called but it’s Bourbon with simple syrup in a freshly smoked glass with smoked ice cubes.

            The ice cream is gonna be good! I did a smoked caramel sauce a while back, it's a huge hit. Keep that smoke rollin!

                          I just cleaned and cut the rib. I think I still need a butcher 101 class but it should tast good. I started drying this back on March 3rd.
