I was asking a couple of days ago what would go good with all of this for a veggie (my wife was adamant that cornbread does not count). We wound up having a basic salad of rabbit food for the green stuff.
The short ribs were the standard prep and cook, The cheese sauce was made with cheddar, mozzarella, goat cheese, and a generous dollop of whipped cream cheese. Nice and gooey!
The cornbread came from someone else's recipe on a different site, but I tweaked it by replacing 1/4 cup of milk with butter milk, cutting the sugar in half, and using two eggs instead of one. But the really interesting tweak was an idea stolen from someone else: fry 2 strips of bacon in a cast iron skillet (I used a 10 1/4" Lodge), crumble the bacon into the cornbread batter, then pour that back into the hot skillet and cook til the edge start to separate from the sides of the skillet. That's when I transferred to the smoker. NOTE: The top will discolor a bit from the smoke, but the taste ...
I smoked the mac and cheese uncovered for about 30 minutes, then covered til the cook was done about an hour after that.
