    What goes good with beef and mac & cheese?

    I'm going to be fixing short ribs with baked mac and cheese this weekend. That is really all I need, but my wife insists on having a veggie with every meal. What would go good with this? (Corn on the cob is a non-starter for various reasons.) We both love spinach, but that doesn't seem to fit in this case.

    Try,Yellow squash, red peppers and zucchini, sauté or grill spritz with light seasoning to taste.

      A bit early in the season to get squash, but I will keep that in mind.

      Snow peas stir fry with peppers water chestnuts

    Brussels Sprouts with an olive oil drizzle and a sprinkle of kosher salt - in the oven or on the grill. Take it up a notch with crumbled bacon.

        Maybe try some good ol' green beans, with onion n' bacon in? Completely disappears, every time I serve it as a side...

          Here is something different, the mushrooms are optional
          Carrot Loaf

          2 lbs carrots, peeled and grated
          1/4 lb. butter
          1/4 lb. mushrooms, peeled and chopped (or shredded)
          1 lb. Spinach, washed and stemmed
          4 oz. Swiss cheese, grated
          4 eggs, beaten
          4 green onions, chopped fine
          1 tsp. salt
          Freshly ground pepper


          1. Preheat oven to 400 degrees. Line a 9x4x3-in. loaf pan with Crisco, then al. foil and butter foil generously
          2. Slowly sauté carrots in 4 Tbl. butter till tender, place in mixing bowl.
          3. Sauté mushrooms and onions in 2 Tbl. butter till tender, drain, and add to carrots.
          4. Heat 2 Tbl. butter in saucepan and sauté Spinach just until wilted, drain.
          5. Stir cheese into beaten eggs and combine with carrot mixture, salt and pepper to taste.
          6. Fill pan with 1/2 the mixture, spread Spinach over and fill with remaining carrot mixture.
          7.Place loaf pan into preheated Bain Marie and bake 45 min., or till sharp knife plunged into center comes out clean.
          8. Let rest 10 min. and then invert onto warm platter, carefully remove foil and slice.

                + 2 - was scrolling down to see if anyone put asparagus down. Grilled after being sautéed in butter and garlic with a little hollandaise sauce and you have something that ties the beef and Mac and Cheese together.

                I like the spinach or other bitter greens idea, to contrast with the mac'n'cheese and the ribs - sort of cut through the heaviness?

                  Haricot vert, which are green beans with a French name so they can charge more for them. Cooked up with a little bacon fat, they are yummy. We also do Brussels sprouts and asparagus when in season.
