Porkloin, Oxtail and Brie

    Porkloin, Oxtail and Brie

    I didn't take any pictures as I was cooking but here are the results of 3 cooks I did this weekend.
    1st is a pork loin I butterflied and rubbed with garlic butter and Weber Chicken rub then wrapped in bacon.
    smoked at 260 until about 145 and pulled last 15 minutes put on a bbq glaze

    2nd was Oxtail tacos. I had never done Oxtail before but I rubbed in olive oil and salt, pepper, garlic and smoked for 4 hours at 225
    at that point I put in a foil wrapped tray with a jar of roasted green chillis and braised for another 2 hrs. Best tacos I have ever had

    3rd was a Brie cheese from Costco. I topped with blueberry's and honey on top of a cedar plank at 200 for about 20 minutes until it burst on its own. Man does Brie taste good when warmed

    never did oxtail. I never saw it around here for sale. is it really oxtail or is it cow tail? 6 hours to finish wow. did you rub? how big was the tail in length and how much meat do you get from it? sorry for so many ?'s but this looks like a new project for me if I get the go from SO.

      Man, that looks like a killer spread. I love oxtail but the only way I have ever prepared it is jamaican style in a dutch oven. Don't even get me started on the smoked brie. Nice work.

        It is cow tail, not sure why it is called Ox tail. it came pre-cut in about 1" lengths from may 3" wide down to 1/2" wide. We got a pretty good chunk of meat from it enough to have about 10 taco's but I don't know if it was an entire tail or not.
        I got it at Fred Meyer.
        I rubbed with salt, pepper, garlic and taco seasoning. I was surprised how long it took to cook but it is a pretty tough and fatty meat and wanted it really tender. I will definitely do it again it had a lot of flavor

          That's what my SO though ox tail was. she said she has seen it in the store but were cut into small pieces. did you just lay it on the grill?

          Your SO nailed it. I did just put it straight on the grill. looked really nice after smoking but still tough, got nice and tender after braising.

        With the Ox tail, you only get meat from inside each bone...right? I've seen it in stores but usually sold in individual pieces. How many bones did you cook? I never thought about that for tacos! That's enlightening. Imma hava try that!

          it is more like individual vertebrae with meat on the outside.

          jacmac422 oooooh ok I must have been thinking of bone marrow. I probably haven't see ox tail then. Thanks for clearing that up.

        jacmac422 This will definitely be on the to do list this weekend. I LOVE oxtail but it is so much of a hassle to cook! Your method looks like a slam dunk!! Thank you
