I love this idea and am going to try it. 3# of bread seems a lot for just 12 muffins. I also wonder if all that stock is necessary. Seems like it would make the muffins soupy.
I'm wondering if anybody has tried this and how they have adjusted. I'm also adding oysters which will bring some moisture to the mix.
I do stuffing balls about the size of a tennis ball. Advantage with this is there's crusty parts all around to soak up gravy. I do tend to add stock until it feels right. Pick up the stuffing and see if it'll stick together to bake. Oysters sound really tasty too.
