    Some recent cooks

    Recently I switched to the Pit Barrel cooker from my 14 inch WSM. Can't thank the moderators enough for the recommendation. Here are some of my recent cooks just to show you the results. The only issue was convincing my wife I needed to buy two smokers in a year

            Ibyer there was no learning curve with the PBC, but there had to be some trust in the product. For some people I could see that being a struggle. If you obsess about controlling temps, which is how I learned initially and lets face it that can be fun, the PBC can frustrate you. You'll see it start out way over 300 and then creep downward. My recommendation don't take temp reading at all once it's set up unless you suspect it's not hot enough. If you have lit your coals correctly it will self regulate. Other's may feel different about this and I would love to hear their input.

            The PBC has yet to let me down. In the month I've had it I've cooked 5 briskets a turkey and 2 racks of ribs and a chicken. All of them have been juicy and flavorful. But if you enjoy the smoking experience, because again it can be fun, you might be left feeling like some of your fun is gone. For those times I still have my WSM and my modified kettle grill.

            One more thing about the curve, while I've studied the art of smoking for years, my first real smoke was in August of this year. I tell everyone who asks that the Pit Barrel makes me look better than I am.

              Dude, this is so hilarious that your name is Jared, my wife also says the Pit Barrel will be my best ever purchase, and I constantly have to tell people when cooking brisket it's not me it's the cooker.
