I was thinking of boiling them in some salt water for 10-20 minutes, drying them, sprinkle with some olive oil and salt and putting on smoker for a while.. 225 for an hour or so?

I never boil mine. Actually, I don't smoke em' either...just roasted. I can't think of a reason why not to smoke em' up though at a decent heat. Say 325-350. I'm also seeing 225F for approx. 90 mins. Keep us informed how you do!
You have the right plan. Salt the water (I forget how much I use, don't go crazy), simmer a few minutes, and while they are wet smoke til dry. Remember, wet surfaces help smoke stick.

My Ma, n her Ma (Gma) always just soaked 'em in salt water fer mebbe overnight, sometimes less. Drain, spread on a cookie sheet, roast in th' oven. Reckon substitutin' smoker fer oven'll gitcha where yer headin'. I love these every year, 'bout this time. Happy memories!

Ultimately i failed completely...
I had washed the seeds, placed them out to dry overnight...
The next morning the Mrs put them in a ziplock to get them off the counter..
I didn't get back to them for 2 days and once i opened the bag i noticed that there was fuzz on a bunch of them...
So to the trash they went..
I had high hopes. King Soopers still has some pumpkins for sale, as well as Home Despot..
Hopefully this weekend....
