    Banana leaves and smoke?

    This coming weekend I'm planning on doing a pork butt to make pulled pork tacos. I have my eye on Serious Eats' conchinita pibil recipe. It calls for making the marinade, letting it sit (couple hours to overnight), wrapping it tightly in banana leaves, and then smoking it. One question I have if there is anyone here has tried it or another similar recipe. Does the smoke impart any flavor to the pork butt if it's wrapped in banana leaves? On one hand it's wrapped so I can't see how it would but then again banana leaves aren't foil so some smoke may do something. If anything it may affect the banana leaves which would then affect the taste of the pork possibly?

    I'm going to use smoke anyways...can't hurt. Just curious though.

    Oh, and for those who haven't tried it, fresh corn tortillas are easy and seriously up your taco game. Fresh masa flour, hot water, salt, let sit for 30 minutes, press, and griddle. Grillgrates upside down on a gas grill helps me hammer them out in 1/4 of the time.

    Great recipe - I made the Serious Eats conchinita pibil and it turned out extremely well. The smoke does come through very nicely.

      Good to know! I haven't had a clunker yet from JKLA so I figure it'll be good

        The last pic was the steak. Had me a taco day cause it was my bday. Had fun cooking it all. 5 lbs chicken, 5 lbs of skirt steak 8 lbs of pork and another 14 lbs of the pork wraped. Except for the chicken all the other receipts were from serious eats website. Also made the 4 sauses. Had all the neighbors over and had a lil fun

          Enchiladas are always a strong contender for pulled pork leftovers, as is chili. Not sure what smoking in banana leaves does for it.

            There's not a lot I miss about living in the Houston area ... except those two banana trees we had in the back yard. The bananas were an inedible variety but the leaves made grilling & smoking a lot more fun.
