    My first smoke Themed dinner

    To start I smoked Gouda and cheddar cheese a week ago four hours cold smoke. We also did smoked salmon croquettes The main course meets pastrami from scratch and lamb shoulder slow and low. The desert, smoked cheesecake

          I'm tipping my hat to you Sir.👌 That was a very creative cook. I would never have dreamed of smoking a cheesecake. Please share your method and temps and type of wood chunks used. I'm thinking that is a must try smoked dessert cook.👍

            Thank you. 300 for about 1:45. I was light in the wood. I used cherry. The flavor was fantastic. Just a light finish of smoke flavor.

                    It's been my experience smoking sweets (pies, cookies, etc.) is eat it up fresh. Unlike cheese which benefits from holding after smoking, desserts the reverse is true.
